Easy Delicious Vegan Brownie (optional gluten free)

This simple recipe has been tasted and approved by over 200 people.

Most could not tell the difference to a regular brownie. It has twice as much fiber and ½ the amount of saturated fat as a regular brownie. It is delicious!

First, blend/mix all wet ingredients (at room temperature) to a fine consistency:

  • 175 g (1 big) ripe avocado

  • 100g (2 ripe) bananas

  • 10 TBS virgin coconut oil

  • 400g Medjool Dates chopped. If you are not using Medjool dates, pre-soak in water for a few hours to soften.

  • 250ml of water

Second, mix all dry ingredients:

  • 200g Flour; Whole wheat/ Wholegrain Spelt (less gluten than wheat)/Buckwheat (gluten free)

  • 65g raw cocoa powder (no sugar added, high cocao quality gives better results)

  • 30g unrefined raw cane sugar

  • 1 tsp baking soda

  • 1tsp baking powder

  • 2 tsp cinnamon powder

  • Pinch of salt

Third, mix the wet and dry ingredients together. We all have different sweetness preferences, so I advice to taste the mix for sweetness before sticking it in the oven (no egg means its safe to taste!). You can always add more sugar if it is not sweet enough.

Lastly, place a sheet of baking paper in a baking form and pour in the mix. Bake in the over at 180 degrees Celsius for about 30 to 35 mins. Check after an hour with a toothpick if it is ready..

Finally, Enjoy it guilt-free!!!
